On my work days it usually gets to around 2pm and I think 'oh gosh! I've not eaten and I'm starving!' having a child makes you appreciate any alone time & the importance of getting as much done as possible. I'm usually so in 'the zone' that I loose track of time until my tummy growls at me and I think 'what can I make that's really fast and really filling?' usually my go-to is pasta pesto but it often leaves me feeling a bit rubbish (I always make too much and end up eating at least two bowls) so last work day I made it my goal to try something different.
With limited ingredients I felt a bit stumped for inspiration but I thew these items together and was really pleasantly surprised. I'm not usually a salad eater but whenever I do have them I think 'why don't I have these more often?' same applies to soup.
There really is no recipe to follow as such, it's just lentil, spinach leaves, avocado and boiled eggs, oh and a sprinkling of olive oil and a bit of salt too. Enjoy!
