Oh, let me tell you about my latest kitchen adventure – making an easy carrot cake recipe. It was one of those days when the kids were bouncing off the walls, and I thought, “Why not turn this chaos into cake?”
My mantra? Keep it straightforward. No fancy ingredients or techniques, just the comfort of mixing, pouring, and the magic of baking. I grated a couple of carrots (great arm workout and the kiddos loved helping!). Mixed those with the usual suspects – flour, sugar, some cinnamon for that warm, fuzzy feeling, and a couple of eggs to hold it all together. The beauty of this recipe is its forgiving nature; it’s like that friend who laughs off your typos in frantic text messages.
The batter was thicker than my toddler’s porridge but don’t panic. That’s how it’s supposed to be! Into the oven, it went, and oh, the smell that filled the kitchen was like a warm autumn hug. The hardest part was waiting for it to cool down enough to slather cream cheese frosting on top.
Let me tell you, cutting into that moist, flavourful carrot cake and seeing the kids’ eyes light up was all the validation I needed. Simple? Check. Delicious? Double-check. Family bonding? Priceless.


Easy Carrot Cake Recipe
You will need :
- For the cake
450ml vegetable oil
400g plain flour
2 tsp bicarbonate of soda
550g sugar
5 free-range eggs
½ tsp salt
2½ tsp ground cinnamon
525g carrots,
grated 150g walnuts, chopped - For the icing
- 200g cream cheese
- 150g caster sugar
- 100g butter, softened
I know carrot cake is a pretty easy one to make but previously I have always found they are hard to rise. I tried combining plain flour with bicarb and eggs to achieve the same effect and found it rose SO much better. I think I will always go with the plain flour over self-raising from now on.
For the carrot cake, preheat the oven to 160C. Butter your cake tin (I use one of those that the bottom can be taken out like this one).

Mix all of the ingredients for the cake, except the carrots and walnuts, together in a bowl until well mixed. Then stir in the carrots and walnuts.
Spoon the mixture into the cake tin and bake for an hour (our oven is quite hot so it could take longer) to test insert a knife into the middle come out almost clean. I find if it’s still a tiny bit wet it makes for a better moist constancy Remove the cake from the oven and set it aside to cool for 10 minutes, then carefully remove the cake from the tin and set aside to cool completely on a cooling rack.
Simple!
The icing is equally as easy to make simply beat the cream cheese, caster sugar and butter together in a bowl until fluffy. Spread the icing over the top of the cake with a palette knife.
