
Easy vegan cauliflower mac and cheese is one of our family’s favorite recipes. I am awful at actually sharing the things we eat over here despite it being one of our most requested posts. So finally here you go! I also recorded making this recipe with my friend Bethie (Hungermama) on her podcast ‘Friends with Recipes’.

Now, I know some of you may be fondly reminiscing about those creamy, non-vegan versions. But seriously, don’t let the ‘vegan’ in front deter you. This is a dish full of comforts, oozing with creaminess and it’s so easy to make, even on those evenings when you’ve only got half an eye on the stove and the other on the squabbling little ones.
Imagine a sauce, so rich and velvety, prepared with soaked cashews that have been blended to silky perfection, nutritional yeast that imparts that ‘cheesy’ flavor we’re looking for. As for the topping, toasted breadcrumbs sprinkled generously on top adds that fabulous crunch contrasting the smooth cheesiness. Yes, my lovelies, we’ve achieved vegan Mac & Cheese nirvana.

This vegan mac and cheese is everything you want from a macaroni cheese. It’s Cheesy, rich, creamy, and satisfying filling.
Vegan cauliflower mac and cheese
The best part about this macaroni cheese is it’s SO simple to make. The hardest part is waiting to eat it. Once you’ve made your ‘cheese’ sauce it’s just a case of blending it up with the other ingredients and mixing it with your pasta. Voila! Enjoy!
Vegan Mac and Cheese Instructions
1 preheat oven to 200oC (400oF)
2 cook the macaroni until al dent
3 boil the cashews, cauliflower and carrots until so!
4 drain the veg, but retain a mugful of the water
5 blend the veg together with celery salt, nutritional yeast, garlic powder, onion powder, turmeric, dijon mustard, olive oil, lemon juice, nut milk, and salt and pepper
6 use the retained cooking water to thin out the mixture
7 place the cooked macaroni in an oven dish and pour the sauce overtop and mix
8 top with breadcrumbs and smoked paprika
9 bake 10-15 minutes until the breadcrumbs are toasty
Ingredients for your vegan mac and cheese
- one head of cauliflower, chopped
- two medium-sized carrots, chopped
- a handful of cashews (soaked for five minutes in boiling water)
- 1 teaspoon celery salt
- 3 tablespoons nutritional yeast
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon turmeric
- 1 tablespoon of dijon mustard
- 1 teaspoon smoked paprika (garnish)
- a glug of olive oil
- juice of half a lemon
- cup of nut milk
- salt and pepper
- breadcrumbs
- 250g macaroni pasta
